Ingredients for smoked salmon pasta
- Salmon—Here, we use whole smoked salmon filets with a pepper crust. The black pepper crust is optional. This sauce also works well with cold, sliced smoked salmon lox. A good substitute is smoked trout.
- Lemon—For the juice and zest.
- Shallot—The delicate flavor of shallots suits the salmon perfectly. Half a white onion, small diced, or one-quarter of a leek, thinly sliced, can be good substitutes.
- Garlic— Most dishes benefit from a little zingy garlic flavor!
- Heavy Cream—We love the richness of heavy cream. To make it lighter, use half and half or coconut milk.
- Pasta—We use fettucini here, but linguine pasta would also be terrific because it has a long, flat shape that allows the creamy sauce to flow. Having said that, you may substitute with whatever is available in your pantry, this sauce is versatile and will work well with whatever you have, even orzo.
- Butter and extra virgin olive oil—A teaspoon of olive oil combined with the milk solids in the butter allows you to saute the shallots at a higher temperature without burning them.
- Fresh Dill—The lightly grassy dill aroma adds a fresh note and some color contrast. Substitute with a little bit of fresh parsley.
How to make creamy salmon pasta
Mince the shallot and garlic.
Bring a pot with salted water to a boil and cook the fettuccine until al dente.
Place a skillet over medium-high heat and add a tablespoon of olive oil and a tablespoon of butter. Sauté the shallot and garlic until fragrant.
Pour the heavy cream, lemon juice, lemon zest, and a generous amount of freshly ground pepper. Stir and simmer over low heat for two minutes.
Flake the salmon and add it to the skillet. Stir and simmer for one minute.
Transfer the fettuccine to the skillet with tongs. It is ok if some pasta water transfers as well. Stir and allow the sauce to cover the pasta.
Serve the salmon pasta in bowls with lemon zest and freshly ground pepper.
